You will first discover the world of chilli in all its forms with the artisanal cannery of Espelette. This establishment is made for you. BIPIA opens its doors to you, and through an exhibition and a film, the cultivation and preparation of this product will no longer hold any secrets for you. And of course, the visit ends with a tasty tasting of a whole set of chilli products.

You then head to the famous Agour cheese dairy, at the foot of the Iraty forest. Recognized by prestigious awards including the title of best cheese in the world in 2011, the sheep's cheese undergoes a long and meticulous ripening process, which gives it a unique taste. A fun course accessible to all takes you to the heart of manufacturing, part of a high environmental quality approach. The last stage is that of the tasting, with even homemade sheep's milk ice cream. It takes place either indoors in a space with traditional architecture, or outdoors in an exceptional setting.
Let's now head for the Cave d'Irouleguy located in Saint Etienne de Baïgorry. AOC wines await us there, they are grown with love in splendid landscapes where the vines on the terrace impose the maintenance of manual work. (About wine, did you know? Near the ocean, on the heights of the ledge linking Socoa to Hendaye, a vineyard has been created with underwater vinification in the bays of Saint-Jean de Luz).
Let's continue our immersion in the heart of the Basque Country to the Aldudes valley to discover another AOC product and often medalist, the Basque Oteiza pork. Authenticity, concern for harmonious and controlled development govern the company's approach. It suffices to observe, for example, the photovoltaic panels and the ring attached to the pigs' snouts to prevent them from digging in the ground too deeply. An educational trail facilitates the discovery of the pastures, with the presence in summer of donkeys waiting for the children. After the effort, the tasting of exceptional products is particularly appreciated.
A stop is essential, before returning to our Domaine de Bassilour, at the Moulin de Bassilour, which has become an essential address in the Basque Country for its artisanal production of regional breads and pastries. You can taste them in this typical place dating from 1787. It is a horizontal wheel water mill. During a free visit, you will discover the secrets of making flour with stone millstones, shortbread and the famous Basque cake.
