You will first discover the world of chilli in all its forms with the artisanal cannery of Espelette. This establishment is for you. BIPIA opens its doors to you, and through an exhibition and a film, the culture and preparation of this product will no longer have any secrets for you. And of course, the visit ends with a delicious tasting of a whole range of chilli-based products.



You then head for the famous Agour cheese dairy, at the foot of the Iraty forest. Recognized by prestigious awards including the title of best cheese in the world in 2011, sheep's cheese undergoes a long and meticulous maturing process, which gives it a unique taste. A fun and accessible itinerary takes you to the heart of manufacturing, in line with a high environmental quality approach. The last stage is the tasting, with even homemade ewe's milk ice cream. It is done either inside in a space with traditional architecture, or outside in an exceptional setting.


Let's now head for the Cave d'Irouleguy located in Saint Etienne de Baïgorry. AOC wines await us there, they are cultivated with love in splendid landscapes where the terraced vines impose the maintenance of the work by hand (About wine, did you know that?  Near the ocean, on the heights of the cornice linking Socoa to Hendaye, a vineyard has been created with underwater vinification in the bays of Saint-Jean de Luz).


Let's continue our immersion in the heart of the Basque Country to the Aldudes valley to discover another AOC product and often awarded the Basque pig Oteiza. Authenticity, a concern for harmonious and controlled development drive the company's approach. It is enough to observe, for example, the photovoltaic panels and the ring fixed on the snout of the pigs to prevent them from digging too deep into the ground. An educational trail makes it easier to discover the pastures, with the presence of donkeys waiting for the children in summer. After the effort, the tasting of exceptional products is particularly appreciated.


Before returning to our Domaine de Bassilour, you should stop at the Moulin de Bassilour, which has become an essential address in the Basque Country for its traditional production of regional breads and pastries. You can taste them in this typical place dating back to 1787. It is a water mill with a horizontal wheel. During a free visit, you will discover the secrets of flour making with stone wheels, shortbread and the famous Basque cake.
